A fan that was never ducted anywhere, or one that dumps into the attic instead of outside, will take a brand new bathroom back down over a few years. That gets done right while the ceiling is open, and it costs almost nothing at that stage.

The common request is opening the kitchen to the next room, and the answer depends on whether the wall is carrying load. That gets determined before demo, not during. If it is bearing, a header and posts take the load and the wall still comes out.
